You may be confusing the writing of it and the compiling of it. The writings were collected much later. In some cases into the 4th century.

The Gospels were written during christ's life. The epistles were later. Acts was later.

The New Testiment books are not chronological. The four Gospels are first, then Acts, and then the rest except for Hebrews are listed by length.
